This place has a strain of chile grown specifically for the restaurant. Tony ate enchiladas with carne adobada (pork marinated in red chile sauce), beans and rice, pozole (hominy), sopapilla (fried bread) and green chile salsa (level 3 of spiciness, which Tony said was painful).
