Tony had a meal with Miray Girt, who was born in Spanish Basque country but raised in France.They discussed the differences between French and Spanish Basque foods. They had "ventrèche de thon, or tuna belly with tomato carpaccio; pigeon, roasted and then flambéed, served with a terrine or pâté of the same bird."
